  • 1 tablespoon biryani masala powder

Step 1: Marinating the Chicken

In a large bowl, mix together the yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Add the chicken pieces to the marinade and coat them well. Cover the bowl and let the chicken marinate for at least 1 hour in the refrigerator.

Step 2: Cooking the Rice

In a deep pot, bring water to a boil and add the soaked rice, bay leaves, cardamoms, cloves, cinnamon stick, and salt. Cook the rice until it is 70% done. Drain the rice and set it aside.

Step 3: Preparing the Biryani

In a large pan, heat the ghee over medium heat. Add the sliced onions and cook until they turn golden brown. Remove half of the fried onions and set them aside for garnishing.

Take a heavy-bottomed pot and spread a layer of the cooked rice at the bottom. Top it with a layer of the chicken mixture. Repeat the layers until all the rice and chicken are used.

Sprinkle the reserved fried onions over the top. Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes. This process is known as "dum cooking" and helps infuse the flavors together.

Once the biryani is cooked, remove it from the heat and let it rest for a few minutes. Gently fluff the rice with a fork before serving. Serve hot with raita (yogurt-based side dish) or a refreshing salad.
